So after my experiment with burdock root, I have to admit I’m a little obsessed. I have been reading more about it, and now I’m following Chichi Wang all over Serious Eats (why have I not spent more time on this site before now?).
I was thinking about confit for my second technique this month, but I’m not ready to butcher a duck and I think that it sounds like a great winter weekend project. Duck confit — what do you think?

In annoying news this week, the Guardian has an article stating that studies are showing that sea salt around the world is contaminated by plastic, which may be why so many with corn allergies are having trouble finding sea salt that doesn’t cause them to react. Yay.
Also, Allergic Living has an updated article on the Epipen recall stating that the the FDA issued a stern warning letter to Pfizer Inc. which manufactures EpiPen and EpiPen Jr., which alleges that it failed to thoroughly investigate multiple serious component and product failures for your EpiPen products,including failures associated with patient deaths and severe illness. Check your Epipens, people.
