Are you thinking of spring yet? I am, but in keeping with potato month, how about a spring potato recipe, like spinach roasted potatoes? I have also been thinking of breaking out the Peeps cake molds for these Welcome Magic Spring cakes from our archives. What are you thinking of cooking for spring?
I (Denise) don’t know how I feel about this, but since I have home canned garbanzo beans, it might be worth a shot – Honey Roasted Chickpea Butter. I’d skip the ghee and I might try making some brown sugar syrup instead. I’m not allergic to peanuts, but the idea is kind of intriguing.
I like Vietnamese Spring Rolls in spring, and I really miss peanut sauce. But many of the ingredients are corny, and I’m allergic to coconut, and coconut milk is in the sauce. I’m wondering if I can tweak this Sweet Potato Peanut Sauce to get it where I want it. I’d need to make my own peanut butter (most commercial versions are corned in some way or other) in the the Vitamix which I’ve meaning to get around to doing.
